Ahh Knish... I also always forget about these until this time of year and then I make them for our cooking with potatoes class... They are truly inspiring. The salty bit from lumpfish roe works nicely in the filling.

Forgot about knishes: http://en.wikipedia.org/wiki/Knish Twelve years ago I used to work at a jewish bakery - they were always a huge success. Delicate fingerfood. I like the idea of a salty caviar interior that pops.

also thought of making a different filling with wild mushrooms and truffle oil... Good festive food I think!
